What you'll need
- 1/2 cup sugar
- 1/2 cup water
- 4 tbsp fresh thyme leaves removed from the stem (or 1 tbsp dried thyme leaves)
What to do
Combine sugar and water in a saucepan and place over medium heat.
Bring to a simmer, stirring occasionally to make sure sugar is dissolved.
Add thyme leaves and stir to combine. Allow to simmer (but not boil) for 3 minutes. Remove from heat.
Allow leaves to steep in syrup for 15-20 minutes. Strain, cool, and keep in a jar in the refrigerator for up to a week.
